Ramat Negev Winery combines different worlds. It can be defined as a combination of the new and old world. The growing and winemaking methods are of the new world, since there is intervention throughout the growing and winemaking processes of the grapevine – we made the growing environment suitable for the grapevine by artificial watering, enriching the land with minerals, fertilizers and all of the necessary elements for the grapevine, by meticulous pruning and using advanced equipment.
However, the wine that is made from the vineyard and its style, are of the old world. Earlier harvesting in order to maintain moderate sugar and alcohol levels and preserve the grapes´ natural acidity. This is how an elegant and accessible wine is made, with soft tannins and a lighter body. Preservation of the fruits´ natural flavor is done by using barrels in a monitored and reserved manner, in relation to the fruits´ intensity
The Vineyards - The manually-picked, harvested grapes are picked early morning and come from a Cabernet Sauvignon plot in the Avdat Vineyard. The vineyard was planted in 2001 in the Carmei Avdat farm in the Negev Mountain area, on loess soil, sand and red soil, 700 meters high.The vineyard benefits from the extreme temperature differences and dryness that characterize the desert area
The Winemaking Process - The fermentation process occurs in cold temperature stainless steel tanks in order to preserve the scents and flavors of the fruit. When this process is complete, the wine is soaked on grape peels in cold temperatures for a period of two weeks, to make the most of the aroma and flavors of the peel. After that, the wine undergoes initial decantation and aging for about 18 months in new American and French Oak barrels. Then, the wine is roughly filtered in order to preserve as much as possible the aroma and tastes after which it is bottled and kept in the winery for a period of six months before going on the market.
Ingredients – 100% Cabernet Franc from Halutza Vinyard
Characteristics: Dry red wine .14% Alco . The wine has a full body and soft tannins. Aroma of cherries, plums and red berry fruits alongside mild notes of green pepper and dry herbs coming together nicely and leading to a long finish. The Color deep, bold purple-red color is reached by roughly filtering the wine, stabilizing and closely supervising that it doesn´t get damaged by oxygen
Serving Recommendation: It will go wonderfully with low-fat meat dishes such as sirloin and filet. In addition, it will go wonderfully with Sainte-Maure cheese or ripe Camembert

This wine is produced from 100% Malbec grapes, which are harvested at an
elevation of 800 meters in the Negev Highlands, in a unique and separate vineyard called “Sheizaf.”
Petit Verdot Ramon 2017
Ingredients – 100% Petit Verdot from Nitzna Vineyard
Characteristics: Dry red wine. 14% Alco. The wine has a full body, solid tannins and a good acidity level The color bold, solid purple-black color is reached by roughly filtering the wine, stabilizing and closely supervising that it doesn´t get damaged by oxygen
Serving Recommendation: It will go wonderfully with high fat content meat dishes such as entrecote and sirloin. In addition, it will go wonderfully with lamb meat stews
